This course contains everything you need in order to master bread making and improve your sourdough knowledge, whether you're a beginner or a pro. It consists of detailed step by step videos and instructions in a convenient Instagram format, guiding you through the whole process.

There are detailed instructions for how to create a sourdough starter as well as how to work with dry and fresh yeast and other preferments.​

  • A workbook with everything you need to understand the science of bread making, such as how to use different types of flour, flour-water-salt ratios and the importance of temperatures and the environment.  
  • An introduction to sourdough starters.

This course contains everything you need to know in order to make traditional Italian pizza, whether you're a beginner or a pro. It consists of detailed step by step videos and instructions in a convenient Instagram format, guiding you through the whole process. 

In this course we use a wood fired oven but we also cook in a normal household oven, making this training accessible to everyone. You will master the skills of a proper Italian Pizzaiolo, from sourcing the right ingredients for your recipe to understanding the whole world of pizza making. 

You will find 2 recipes, a sourdough pizza recipe (also converted to dry and fresh yeast for those who don't have a sourdough starter) and a biga pizza recipe (an Italian preferment often used in Italian pizzeria and bakeries by using dry or fresh yeast). You’ll learn how to bake pizza and achieve a beautiful open and light crust! 
Bonus material: 
  • A workbook with everything you need to understand the science of pizza making. 
  • An introduction to sourdough starters.
  • Tips for cooking in both a wood fired oven and a home oven.
  • A traditional tomato sauce recipe.
  • Instructions for how to make a batch dough, allowing you to freeze the dough and defrost at any time.
