Cheese Grissini

This will be your new favourite snack. Crispy and full of flavour, these cheese grissini are easy to make with an amazing end result. And there is no need for any special tools! They’re perfect to accompany your antipasti, as a snack before your meal or with a few dips.
Makes: 20-25 grissini

Ingredients
  • 280g strong white flour, plus extra for dusting
  • 20g olive oil
  • 6g dried yeast
  • 2 teaspoons of runny honey
  • 130ml room temperature water
  • 6g fine sea salt
  • 30g grated Grana Padano PDO cheese
  • Semolina or polenta, for dusting

Method​
  1. In a large mixing bowl combine the flour, olive oil, dried yeast, water, honey and the Grana Padano PDO cheese. Use a spatula or a wooden spoon to mix all the ingredients until no dry flour remains.
  2. Add the fine sea salt and mix it in thoroughly. Transfer the dough onto a lightly floured surface and knead for about 5 minutes, until the dough is smooth and elastic.
  3. Place the dough back inside the bowl and cover it with a damp clean kitchen towel or cling film and let it rest at room temperature until it has doubled in size. This should take about 1 to 1.5 hours, depending on the room temperature. Meanwhile prepare 2 baking tray lightly dusted with semolina or polenta to prevent sticking and preheat your oven to 180°C (350°F). 
  4. Once the dough has risen, move it on a table surface and gently shape it into a rectangular block without deflating the dough too much. Using a spatula or a sharp knife, cut the dough into strips about the width of one finger. Roll each dough strip into a thin breadstick, keeping in mind that they will expand during baking. Try and keep the thickness of each grissino consistent so they will all bake evenly at the same time.
  5. Now arrange long ways the grissini on the prepared baking tray, leaving about a finger’s width of space between each one. Bake for around 20 minutes, or until the grissini are nicely golden and crisp all around. Once baked, remove the grissini from the oven and let them cool completely. They will crisp up more as they cool. Enjoy your crispy and cheesy cheese grissini as a snack or serve them with dips and antipasti!
