This is how to make a delicious, Roman-style, bean salad - Insalata di Fagioli alla Romana. It’s a hearty, home-cooked dish but you’ll often find it served in local restaurants too. Like all rustic recipes, it involves very little preparation and just a few simple ingredients, but you need to make sure they’re the best quality. And if you don’t like anchovies or want to make it vegan, you can just use sun-dried tomatoes for the dressing instead or even a few tsp of capers. If you enjoy this recipe, why not join one of my A Taste of Rome online cooking classes, where we make this and other delicious Roman recipes. Serves 2

This looks amazing! If making as a side dish what would you recommend for a main that would compliment it? Thanks!

I made this salad for Memorial Day weekend. But now that it has mellowed in the fridge for about a week, I think it's better. The onions are not a "bitey" as they were. It goes great on warmed baquette.
