Summer lemon and rocket spaghetti

​Here is another great summer pasta recipe! 
All you need is 4 ingredients - rocket, parmesan, a good extra virgin olive oil and lemon zest! This recipe is super fresh, speedy and full of flavour. It's definitely one that will be on our table all the time this summer! 

This recipe will make enough for 2 people.

​What you need: 
  • 250g of spaghetti 
  • An handful of rocket and extra for garnish 
  • Parmesan 
  • 1/2 lemon (juice and zest)
  • Extra virgin olive oil
  • Black pepper 

The cooking process:
  1. Cook the spaghetti in salted boiling water until al dente.
  2. Before you drain the pasta, save 4/5 tbsp of the starchy water.
  3. Drain the pasta and put it back in the pot (without any heat) just so the remaining heat of the pan can maintain the temperature of the pasta. 
  4. Add a good amount of the olive oil until the pasta gets nice and shiny and stir well.
  5. Add some grated parmesan, half the juice of the lemon and a touch of ground black pepper and stir.
  6. Now add some of the starchy water that you saved to the pasta. Add the rocket and stir well until the pasta has a creamy consistency. 
  7. Taste before to serve. Adjust the flavour and the consistency with more starchy water and more parmesan if needed. 
  8. Serve the dish with some rocket leaves, lemon zest and some shaved parmesan on top. Then enjoy!
