Here is a great summer pasta recipe. All you need is 4 ingredients - rocket, parmesan, a good extra virgin olive oil and lemon zest! This recipe is super fresh, speedy and full of flavour.
250g of spaghetti
An handful of rocket and extra for garnish
20g Parmesan cheese
1/2 lemon (juice and zest)
Extra virgin olive oil
The cooking process:
Cook the spaghetti in salted boiling water until al dente. Before you drain the pasta, save 5 tbsp of the starchy water.
Drain the pasta and put it back in the pot. With the heat off add 4 tbsp of olive oil, the grated parmesan cheese, the juice of the lemon and the zest, a touch of ground black pepper and stir in all in vigorously.
Now add some of the starchy water that you saved to the pasta and stir well until the pasta has a creamy consistency. Add the rocket (saving few leaves for garnish) and stir once again.
Serve the dish with some fresh rocket leaves and shaved parmesan on top. Enjoy!
