Italian Panino

In Italy we call this a "merenda", a light meal made between breakfast and lunch or between lunch and dinner. This panini is full of  Italian flavours for you to enjoy as a fast and very tasty meal if you are in rush or if you are looking for something to eat on the go. Basically, it's a fancy sandwich, but it's so tasty that we've given you the recipe! 
All you need:
  • A small focaccia or ciabatta bread 
  • Rocket (about a handful)
  • 2/3 slices of prosciutto 
  • Half of a nice, ripe, fresh tomato 
  • 1 mozzarella ball
  • Olive oil 
  • Salt 
  • Pepper 
  • Balsamic vinegar 

The cooking process:
  1. First of all, cut and grill your bread in the oven until the inside of the bread is slightly crispy.  Alternatively, you can toast it in a pan.
  2. On the bottom half of the bread, add a drizzle of extra virgin olive oil and a touch of salt and pepper. 
  3. Working from the bottom part of the bread, add in sequence all of the ingredients: the slices of prosciutto, the rocket, the tomato sliced, the mozzarella sliced. 
  4. Finish with a little drizzle of extra virgin olive oil salt pepper and a drizzle of balsamic vinegar.

To serve:
Your panino can be made first thing in the morning and packed for lunch or you can wrap with cling film and  leave it in the fridge for the day after and it will still be perfect - you don't even need to warm it up.
