Gnocchi alla Sorrentina! We absolutely love this tomatoey, cheesy dish from Sorrento! They are very simple to make with just a few ingredients, and they take no time to cook.
Serves: 3/4

Ingredients
  • 500g gnocchi
  • 400g can of San Marzano tomato
  • A small bunch of fresh Italian basil
  • 2 cloves of garlic
  • 1 small red onion
  • Extra virgin olive oil
  • Parmesan cheese
  • 1 mozzarella di bufala

Method
  1. Follow this recipe if making homemade gnocchi.
  2. Start by finely dice the onion and the garlic. On a medium heat warm up a large frying pan, add 2tbsp of extra virgin olive oil. Sweat the onion for few minutes until golden and then add the garlic for 1 minute. Add in the can tomatoes and crush them with a potato masher or fork. Add 100 ml of water, a pinch of salt and pepper, 5 whole basil leaves and let the tomato sauce simmer on a gentle heat.
  3. Bring a pot of salted water to the boil and turn the oven on a medium high grill mode.
  4. When the water starts boiling cook the gnocchi. When the gnocchi start to float in the water transfer them straight into the tomato sauce. Add a little pasta water to emulsify the sauce and give it a good stir.
  5. Move the gnocchi with all the tomato sauce inside a large ceramic plate or tray. Add few fresh basil leaves on top and cover all the gnocchi with Parmesan cheese and chunks of mozzarella all around. Cook this in the oven on a grill mode for about 5 to 7 minutes or until you see a nice golden brown crust on top of your gnocchi.
  6. Once ready, let them rest for about 5 mins and bring to the table. Enjoy!
