Salame Al Cioccolato

Salame di Cioccolato is a traditional dessert from Italy common during Easter but its festive look also makes it a great occasion for Christmas. It is is a great way to make a festive snack packed with healthy nuts reach in fibres, protein and unsaturated fats. It’s easy and simple to make, you only need a few ingredients and it tastes delicious.
Serves: 6-8

​Ingredients
  • 250g of digestive biscuits
  • 50g of mix nuts (pistachios, almonds or hazelnuts)
  • 150g of unsalted butter ( use unsalted vegan butter for a vegan version)
  • 200g of dark chocolate 
  • 100g of caster sugar 
  • 2 eggs (use 100g of oat or soy milk for the vegan version)
  • 1/3 tsp vanilla extract
  • ​Icing sugar to decorate 

​Method
  1. Melt the chocolate gently with a bain-marie method and set to one side to cool down slightly. 
  2. Cut the butter into small squares and bring it to room temperature. Now, in a bowl, mix with a wooden spoon the sugar and the butter together until you have a nice smooth consistency.
  3. Add the eggs with the sugar and butter mixture and mix well until it is all nicely combined. If you are using milk instead add this now too. Now add the melted chocolate together with the vanilla extract and mix well. 
  4. Finally crumble the biscuits with your hand into small pieces, it doesn't matter if they are different sizes, that’s perfect. Add them to the mixture and mix well.
  5. Cut a long piece of parchment or baking paper. Sprinkle some icing sugar all around the paper and spread the chocolate mixture on top to create a long rectangle shape. Roll up the paper and wrap it like a big piece of candy. Use the paper to roll and even out the shape until you have a perfect & round salami. Leave to set in the fridge overnight or until it’s nice and firm, about 4 - 5 hours. refrigerate them overnight, or for at least 5 hours to let the chocolate firm up.
  6. When it comes to serve it, remove the paper and dust the chocolate salami with icing sugar. Serve with coffee or tea or even with ice cream. Enjoy!  ️
